This is a practical training module for restaurant and cafe owners/managers, covering many aspects of understanding tow food retailing and merchandising. - 12 weeks of "one to one" 2 hour discussions and practical. One to one is essential as all matter is specific to the existing restaurant/cafe operation, its placement, demographic, positioning & more specific to the business goals. - The aim is to learn the many elements of setting pricing, understanding the impact of price on financial analysis, meeting food trends [innovation/cusp/standardisation], profitability, working the elements.
